In 1939, Houppert built a new 40 by 100 cask building. The basement was poured, the vertical casks installed, and then the building constructed around them. The casks were purchased from the Prima Brewery of Chicago owned by Al Capone.
The main winery was of brick and stone with a wine cellar and two stories. The wine cellar was considered one of the best in the country because of the construction and environment. However the fermenting gases created could kill you if all of the windows weren't open. Bottling and packaging was done on the second floor and pressing was done on the first floor and outside on the loading dock. Houppert was employing around 40 workers. According to local residents, a couple of employees were rather enterprising and got in trouble with the "G" men for bootlegging.
